1. Sake: Focus on the "Kanji" on the Label

Sake's rank is determined by its ingredients and "how much the rice was polished (rice polishing ratio)".

・Those labeled "Junmai": Sake made only from rice, rice koji, and water. For when you want to enjoy the rich flavor and umami of the rice itself.

・Those labeled "Ginjo": Made by heavily polishing the rice and fermenting it slowly at low temperatures. Characterized by a fruity, floral aroma.

・"Daiginjo": The highest grade, polished even more than ginjo. Features an astonishingly clear taste with no off-flavors.

 

Quick Tip

Check the "Sake Meter Value" on the back label. Generally, "+" indicates dry, while "-" indicates sweet.

 

 

2. Wine: Choose by Color and "Body"

You often hear the term "body" when selecting wine. This refers to the drink's "weight" or "mouthfeel."
